
These Jerk Jackfruit & Black Bean Wraps are here to spice up your plate with Caribbean-inspired flavors. Packed with protein and fiber, this quick and easy wrap is perfect to pack up for a busy day or bring with you on a picnic. Ingredients2 servings
- 2 large whole wheat tortillas
- 1 14-oz can (1.25 cups) young jackfruit, drained and squeezed dry in a clean towel
- 3/4 cup black beans, rinsed and drained
- 1 peach pitted and diced*
- 4 green onions, roughly chopped
- 1/2 cup cabbage, shredded
- 1/2 red onion, roughly chopped
- 1/4 cup bell pepper, roughly chopped
- 1/4 cup apple cider vinegar
- 2 Tbsp cold pressed avocado oil
- 3 Tbsp jerk seasoning
- 3 Tbsp cilantro, chopped
- 2 Tbsp agave syrup
Directions

In a food processor or high speed blender, combine red onion, green onion, bell pepper, vinegar, avocado oil, agave, jerk seasoning, and salt and pepper to taste. Process until smooth then transfer to a medium saucepan.

Heat jerk sauce over medium heat. Add jackfruit and beans and toss to coat then bring to a simmer. Reduce heat and simmer 10 minutes.

Gently warm tortillas in a skillet on medium-low heat 1-2 minutes until they are pliable. Divide jackfruit mixture between tortillas. Top with cabbage, peach, and cilantro. Roll into a burrito and slice in half.
Notes:
- If fresh peaches aren’t available, try defrosted frozen peaches or drained canned peaches
- For a spicier sauce, try scotch bonnet peppers or another spicy pepper of your choice
- Can use maple syrup instead of agave
